I have found it. My new favorite snack. And it didn't really take much to come up with either. Over this past weekend I was jonesing for some sort of snack. I try not to keep actual snacks in the house, because if we have snacks, we eat snacks lol. So I needed something I could make with what I had in the pantry and fridge - enter dark chocolate baking chips, popcorn, and peanut butter.
I simply popped a bag of popcorn, then melted some peanut butter and the dark chocolate baking chips in the microwave until smooth. I used probably a little over a 1/4 cup of chips and 2-3 tablespoons of peanut butter. Then I drizzled it over the popcorn and tossed. I ate a little that day, and it was SOOO good. You can't go wrong with peanut butter and chocolate together, then add the salt of the popcorn to the sweet, and you've got a hit.
I put the rest in small Ziploc bags to take to work during the week. It keeps really well. It is a bit messy, because the chocolate doesn't harden so you WILL get chocolate on your fingers. But I like that it's soft and not hard like caramel corn - which is my main aversion to caramel corn.
