Quick & Easy Black Bean Quesadillas

I'm not a person who NEEDS meat in their dishes. I eat meat, but I can feel like a meal is complete even if it's meatless. This recipe came from a lazy Saturday afternoon in which I didn't feel like really cooking. There is something about the task of grocery shopping that makes me not want to actually cook the food after I've made it through the store, through check-out, and back home lol. Usually this is a time when we would grab fast food for lunch, but instead I decided to whip up this quick recipe.

Ingredients
Whole wheat tortillas
Can of black beans
Mexican blend shredded cheese
Taco sauce

These are probably things you usually have in your pantry/fridge, so this is also a great recipe to make when you haven't planned for lunch and need to make something with the resources on hand. 

Place the whole wheat tortilla in your already heated skillet. I spray my skillet with some nonstick spray. On one side of the tortilla place a few tablespoons of black beans and a few tablespoons of enchilada sauce, to taste. On the other side place your desired amount of cheese.

Heat/brown for approximately three minutes, until the cheese is melted. I cook it open faced so that both sides of the tortilla brown at the same rate and everything has a better chance to heat through. You'll know it's done when all your cheese is melted. Once it's fully done, fold the cheese side onto the bean side, serve with a dollop of sour cream, and enjoy!

This is really a good base for any kind of quesadilla. For my husband I often use the same mechanics, but make it a pizza quesadilla with pizza sauce, cheese, and pepperoni.

  2. I add stuff to my easy mac if I am feeling really lazy. Stir in some diced shallots, a sauteed scallion, cherry tomatoes (cut in half), black pepper, and a few shrimp.

  3. Quesadillas are a staples in my family. I love meatless meals (which is why I have become vegan recently) and it is a great way to show people how they can get all their nutrients while limiting or cutting out meat.

  11. I'm a vegetarian so meatless meals are always my thing! I for some reason never thing to even add beans to a quesadilla but this looks too good not to try!
